  • Sugar. To make the simple syrup, you will use a combination of light brown sugar and granulated sugar.

  • Vanilla.

  • Pumpkin Pie Spice. If you do not have pumpkin pie spice on hand, you can quickly mix up your own by combining one part cinnamon with an equal amount of ginger, cloves, allspice, and nutmeg.

  • Bourbon. You can use your favorite bourbon or whiskey for this recipe!

  • Lemon Juice. You will want to use fresh lemon juice.

  • Apple Cider. If you do not have apple cider, apple juice can be used in its place.

  • Maple Syrup.

  • Orange Bitters. You can also used spiced bitters for this recipe or lemon bitters.

  • Orange Sanding Sugar. To decorate your drinking glass!

  • Cinnamon Sticks & Star Anise. You can use whole cinnamon sticks and star anise to garnish your finished cocktail or mocktail.

How to Make The Pumpkin Simple Syrup:

Step One: In a medium saucepan, combine the water, brown sugar, and granulated sugar. Bring the mixture to a boil, whisking to dissolve the sugar completely.

Step Two: Once boiling, add the pumpkin puree and lower the heat to a simmer. Simmer the syrup for about 5 minutes or until slightly thickened. Then, remove the saucepan from heat and stir in the vanilla and pumpkin pie spice, whisking until well combined, another minute.

Step Three: Pour the syrup into a small bottle or mason jar. If you prefer the syrup to have a smoother texture, pour it through a fine mesh sieve. Leave the syrup to cool for at least 15 to 20 minutes before using. It will continue to thicken as it cools.

Step Three: Before filling, dip the outside rim of your glass in a bit of water. Then, roll the outer rim in orange sanding sugar. Fill your serving glasses with crushed ice and strain the drink over it.

  • 1/2 cup (120 ml) water
  • 1/4 cup (50 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated sugar
  • 1/4 cup (68 g) 100% pumpkin puree
  • 1/2 tsp vanilla extract
  • 1 tsp pumpkin pie spice
Pumpkin Bourbon Smash Cocktail:
  • 2 tbsp (30 g) pumpkin puree
  • 2 tbsp (30 ml) pumpkin simple syrup
  • 1/4 cup (60 ml) bourbon
  • 2 tbsp (30 ml) fresh lemon juice
  • 2 tbsp (30 ml) apple cider
  • 2 tsp (10 ml) maple syrup
  • Dash of orange bitters
  • Pinch of ground cinnamon
  • Crushed ice, enough to fill a cocktail shaker and serving glasses
  • Cinnamon stick, star anise, lemon rind, or fresh mint for garnish
Mocktail Version:
  • 2 tbsp (30 g) pumpkin puree
  • 2 tbsp (30 ml) pumpkin simple syrup
  • 2 tbsp (30 ml) fresh lemon juice
  • 2 tbsp (30 ml) apple cider
  • 2 tbsp (30 ml) cream soda or ginger beer
  • 1 tbsp (15 ml) apple cider vinegar
  • 2 tsp (10 ml) maple syrup
  • Dash of orange bitters, optional
  • Pinch of ground cinnamon
  • Crushed ice, enough to fill a cocktail shaker and serving glasses
  • Cinnamon stick, star anise, lemon rind, or fresh mint for garnish
